Ingredients:

1 1/4 cups all-purpose flour
1/4 cup granulated sugar

2-3 tablespoons ice water

4 cups fresh plums, pitted and sliced

1/4 cup light brown sugar

For the Almond Cream:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup almond meal
1 large egg
1/2 teaspoon vanilla extract
Instructions:
Prepare the Crust:
In a medium bowl, mix flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
Add egg yolk and 2 tablespoons ice water. Stir until dough forms, adding more water if needed.
Chill dough for at least 30 minutes.
Prepare the Filling:
Preheat the oven to 375°F (190°C). In a large bowl, toss plum slices with granulated sugar, brown sugar, cornstarch, cinnamon, cloves, and lemon juice.
Prepare the Almond Cream:
In a bowl, beat together softened butter and sugar until creamy. Mix in almond meal, egg, and vanilla extract until smooth.
Assemble the Pie:
Roll out the dough and fit it into a 9-inch pie dish. Spread the almond cream over the bottom of the crust.
Pour the plum filling over the almond cream. Sprinkle sliced almonds on top.
Bake for 45-50 minutes, or until the filling is bubbly and the crust is golden. Let cool before serving.
